Our mackerel comes from the cold Saint-Lawrence gulf waters surrounding the Magdalen Islands. We use only the best fillets, handled by professionals, caught and processed under strict conditions. In fact, the freshness and firmness of the fillets are essential in order to bring out the delicate flavours abounding in this fish. Slightly salted, sprinkled with crushed black Malabar pepper, hot-smoked to perfection, we finally bring the mackerel to a loftiness worthy of grand occasions.
